Quinta de Sant'Ana's Ramisco Tinto uniquely expresses this historic Portuguese grape variety, diverging from the more well-known examples of Colares due to its distinct terroir. While Colares Ramisco vines are famously planted in sandy soils close to the Atlantic, Quinta de Sant'Ana's vines are rooted in calcareous clay, a "chão rijo" or hard soil. This key difference contributes to a distinct character in the wine.

The winemaking at Quinta de Sant'Ana aims to highlight the Ramisco grape's inherent qualities. After careful hand-harvesting and selection, the grapes are brought to the winery where a portion of the bunches are destemmed and crushed, while the remainder are kept as whole bunches. This combination allows for immediate extraction and a slower, more nuanced development of flavors during fermentation.

Fermentation occurs spontaneously with indigenous yeasts in open containers, emphasizing a natural approach. Following fermentation, the wine is aged in used French oak barriques.
