A unique wine that reflects the region's historical and viticultural heritage. The estate, spanning fifty hectares, has been in the same family for five generations, a testament to their deep roots in the land. The wine is a blend of white Fernão Pires and red Trincadeira grapes, a method influenced by traditional practices of monks that dates back to the 12th century. The grapes are cultivated at a high density, approximately 7,000 plants per hectare, to ensure quality over quantity. The vines are trained in the traditional “taça” system and grown on calcareous-clay soils, with some plots bordered by olive and fruit trees, reflecting a commitment to a biodiverse and natural ecosystem.

The winemaking process for Medieval de Ourém is a blend of ancestral methods and careful craft. The white grapes are hand-harvested and pressed using an ancient basket press, with the must naturally filtering through a simple basket before being transferred to large chestnut barrels. Here, the white must begins its fermentation. The red grapes are destemmed and fermented for four days. The red juice is blended with the white must for a final joint fermentation. When this process is complete, the cap naturally sinks to the bottom of the barrel, which helps to filter the wine naturally.

The resulting wine is considered a red wine despite the predominance of white grapes, and it presents a complex character. Tasting notes describe a soft yet strong wine with a full, sharp, and complex mouthfeel. It is a unique nectar with white wine aromas that change according to grape maturity and red wine aromas of mulberries, raspberries, and strawberries. This unique nectar goes along with the region's rich gastronomy, pairing particularly well with dishes prepared with a lot of olive oil.
