Once harvested, the olives are immediately transported to the estate's modern olive oil mill. Here, they are processed using a cold extraction method that preserves the delicate aromas and flavors of the fruit. The olives are gently crushed and pressed, separating the resulting oil from the solids. The oil is then carefully filtered to remove impurities and stored in stainless steel tanks.
