Produced by the winemaking duo Hugo Mateus and Ana Hespanhol, this wine is part of a project dedicated to capturing the tension and electric energy of the northern Portuguese landscape.

The viticulture behind UNDO is centered on high-elevation plots where the cooling influence of altitude is vital for preserving the delicate aromatics and sharp acidity of the Alvarinho grape. These vineyards are farmed with deep respect for the schist-rich terrain, using sustainable practices that eschew synthetic fertilizers in favor of natural soil health and manual vine management. By harvesting early in the season to capture lower potential alcohol and higher natural acidity, the producers ensure the wine remains vibrant and light on its feet.

In the cellar, the sustainable philosophy continues with a low-intervention approach that includes spontaneous fermentation with indigenous yeasts. The wine typically sees minimal sulfur additions and is bottled without fining or heavy filtration to preserve its structural integrity and "alive" character.

This wine offers a complex tasting profile that leans toward savory and mineral notes rather than just fruity ones. The nose opens with a lean, stony minerality and notes of green citrus, Granny Smith apple, and a hint of wet wool. On the palate, the wine is characterized by a piercing, saline acidity that provides a long, mouth-watering finish. Its texture is surprisingly grippy for a white wine, showing a subtle phenolic edge that reflects its honest, unfiltered nature.
