The harvest is conducted by hand, followed by a gentle foot pressing of the grapes in wooden vessels known as Satsnaheli. This traditional method ensures minimal disruption to the delicate fruit. The grapes then undergo a six-month maceration on their skins, a crucial step that enhances the wine's complexity and character, imbuing it with vibrant color and a spectrum of flavors.

Following maceration, spontaneous fermentation occurs using natural yeasts within traditional clay amphorae.
