Eremitas white wines are a testament to the individuality of Rabigato grapes grown in distinct plots. On the Amón de Kélia plot, their vines dig into moderately deep soil with a distinctive grey hue and a quartz micro-fault, all at a lofty 500 meters above sea level. Following traditional methods, the grapes are destemmed and undergo pigeage (punching down) for three hours in a granite lagar. Gentle vertical pressing follows, and the must flows naturally by gravity to concrete tanks in a cool, underground cellar. Here, spontaneous fermentation occurs without temperature control, and the wine rests for a year in the same tanks, allowing the unique character of the Amón de Kélia vineyard to shine through.
