A craft cider from the Minho region of Portugal that showcases a unique blend of traditional and modern cider-making. The cider is made from 96% apples and 4% red fruits. The apples used are a blend of local Portuguese cider varieties, with a specific composition of 40% Porta da Loja, 30% Malápio, 10% Verdeal, 10% Pipo de Basto, and 8% others, which are sustainably sourced from small, family-owned orchards in the region. This focus on local, traditional apple varieties and partnerships with small farmers is a core part of the producer’s ethos. The name of the cider, "Hybrid," is a direct reference to its unique production method, which combines two distinct fermentation styles. Part of the cider is fermented slowly in old oak casks with native yeasts, a traditional approach that imparts rustic and complex characters. The other part undergoes a clean fermentation in stainless steel vats to preserve the fresh and crisp fruit expression. The two are then blended to create the final cider, which receives its natural effervescence from a secondary fermentation in the bottle. Tasting notes for the cider describe a cloudy, golden-yellow color. The aroma is characterized by fresh apple with hints of yeasty complexity. The palate is dry and crisp, with a bright acidity and a savory, mineral character. The finish is complex, balancing the oak's rustic notes with the stainless steel's clean fruit.

Learn more about

Nua is a Portuguese cider producer in the Minho region, a location with a long tradition of producing "apple wine." The brand was co-founded by Miguel Viseu, the winemaker of Saravá and other natural wine labels; Tiago Sampaio, the winemaker behind Uivo Natural Wines and Folias de Baco; and a third partner named João. The founders met in Mozambique in 2014 and later embarked on this cidermaking venture with a shared passion for crafting natural, artisanal beverages. They established their cidery in Ponte de Lima, a town in the heart of the Minho, to be close to the source of their raw materials and to honor the region's heritage of cider production.

The brand's philosophy is rooted in a commitment to sustainability, which is seamlessly integrated from the orchard to the bottle. Rather than owning large commercial orchards, Nua sources its apples exclusively from small, local family-owned orchards in the Minho. This practice supports the local economy and helps preserve regional biodiversity by encouraging the cultivation of indigenous Portuguese apple varieties. These traditional types, such as Porta da Loja, Malápio, and Pipo de Basto, are well-adapted to the local climate and give the ciders their unique character. In the cellar, they embrace a minimal intervention approach, relying on spontaneous fermentation with native yeasts and avoiding the addition of sulfites or other additives. By abstaining from filtering, they ensure their ciders are a true and transparent expression of the fruit. This holistic focus on local sourcing, community support, and low-intervention production defines Nua's sustainable ethos.
