Picotes Wines' Palhete is a unique wine produced in the Trás-os-Montes region of Portugal, specifically in the village of Sendim, within the Douro International Natural Park. This wine is crafted from centenary, goblet-trained old vines, utilizing traditional viticulture practices that emphasize sustainability and minimal intervention. The vineyard benefits from a distinctive terroir characterized by quartz and schist-rich soils, which contribute to the wine's complex flavor profile.

The grape varietals used in Palhete are a field blend of Portuguese varieties (Tinta Gorda, Verdelho Vermelho, Bastardo, Tinta Fina, Tinta de Escrever, Tinta Carvalha, Olho de Rei and 15% white varieties, Donzelinho Branco, Bastardo Branco, Malvasia, Verdelho, Formosa). The winemaking process involves hand-harvesting the grapes in small 20 kg boxes to ensure quality and prevent damage. After harvesting, the grapes undergo spontaneous fermentation using indigenous yeasts, with the traditional method of foot treading in granite mills. The wine is aged in a combination of used barrels and stainless steel, allowing it to develop its character while maintaining the purity of the fruit.
