A traditional expression of Bairrada's spirit heritage, crafted from the pomace of the estate's white grapes, primarily Maria Gomes and Bical. The viticulture underpinning this bagaceira begins with the meticulous cultivation of these indigenous varieties, grown in the estate's diverse vineyard plots, where soil composition and microclimates contribute to the grapes' unique character. After the grapes are pressed for winemaking, the remaining pomace, rich in residual sugars and aromatic compounds, is carefully selected. Distillation occurs in traditional copper alembics, a slow and deliberate process designed to preserve the delicate aromas and flavors of the pomace. This careful distillation is key to the bagaceira's purity and complexity. The resulting distillate is then allowed to rest, typically in stainless steel tanks, for a period that allows the spirit to integrate and harmonize. However, it is bottled without any oak aging, preserving its clear, unadulterated character.
