The Atelier Palhete is a wine from Quinta do Romeu that pays homage to Portugal's rich winemaking tradition, particularly the practice of blending red and white grapes for a lighter drinking experience. This wine is crafted through the co-fermentation of 20% white grapes, primarily Gouveio, Arinto, and Rabigato, with 80% red grapes, mainly Tinta Barroca. The grapes are sourced from the vineyard's coolest area, located near a stream and surrounded by trees. The fermentation process occurs in old granite lagars without temperature control. After just four days, the wine is transferred to a vertical press and subsequently aged in stainless steel tanks throughout the winter. This method allows for a gravity-led bottling without any fining or filtration. The final product is characterized by low extraction and alcohol, delivering a wildly expressive and aromatic profile designed for easy enjoyment. The wine features notes of raspberries, rose petals, and fresh thyme on the nose, complemented by a vibrant palate of red fruit and soft earthy spices, finishing with a refreshing juiciness. It pairs well with hard cheeses, pork, and fresh berries.

Quinta do Romeu has been investigating the mineral qualities of Rabigato by employing cloudy fermentations at elevated temperatures. For the Branco de Maceração, Rabigato was co-fermented with Arinto to highlight its citric acidity and freshness. The grapes were hand-harvested, with 50% of the stems included, and placed into an open tank where they underwent spontaneous fermentation on the skins without temperature regulation. Following a vertical pressing, the wine was aged briefly over the winter in used 500-liter barrels. After racking, it was bottled directly by gravity.
