A distinguished organic olive oil produced in the rugged terrain of Trás-os-Montes, northeastern Portugal. Nestled at 350 meters above sea level, the estate benefits from the dry, extreme climate of the Terra Quente Transmontana, which contributes to the intensity and complexity of the oil. The olive groves span approximately 120 hectares and are cultivated using traditional, non-intensive methods, with native varieties such as Cobrançosa, Verdeal Trasmontana, and Madural spaced generously across schist-rich slopes. Harvesting is done manually and with mechanical vibration, typically between November and December, ensuring optimal ripeness and freshness.

The production process at Quinta do Romeu is a model of sustainability and craftsmanship. Olives are processed at the estate’s own mill on the same day they are harvested—or the following morning at the latest—to preserve their integrity. After being washed in pure water, they are crushed in a granite mill and slowly mixed before undergoing cold extraction in a two-phase decanter. The resulting oil is separated from residual water and solids, washed again, and stored in stainless steel vats until bottling. No refining, additives, or preservatives are used, making this olive oil a pure expression of the fruit and land. Even the byproducts are composted and returned to the soil, completing a natural cycle that reflects the estate’s deep respect for the environment.

On the palate, Quinta do Romeu’s olive oil is a revelation. It presents a greenish-yellow hue and an intense bouquet of fresh grass, wildflowers, and ripe olives. Quinta do Romeu has been investigating the mineral qualities of Rabigato by employing cloudy fermentations at elevated temperatures. For the Branco de Maceração, Rabigato was co-fermented with Arinto to highlight its citric acidity and freshness. The grapes were hand-harvested, with 50% of the stems included, and placed into an open tank where they underwent spontaneous fermentation on the skins without temperature regulation. Following a vertical pressing, the wine was aged briefly over the winter in used 500-liter barrels. After racking, it was bottled directly by gravity.
