A white field blend of approximately 16 different grape varieties reflects the Alentejo region's unique biodiversity. This field blend, sourced from four distinct old vineyards – Covões 2 and 3, Carvoeiro, and Tapadinha – showcases the character of the diverse soils and microclimates within the estate. Meticulous hand-harvesting occurred between August 8th and 11th, ensuring the grapes reached the winery at peak ripeness.

Following harvest, the grapes were gently pressed, and the must underwent a period of static decanting. Fermentation proceeded naturally with indigenous yeasts, allowing the wine to express its true terroir. A portion of the wine (one-third) was fermented and aged in used French oak barrels, while the remainder underwent these processes in Slavonian oak vats. This unique combination of oak influences adds complexity and subtle nuances of spice and oak while preserving the vibrant fruit character. Malolactic fermentation further softened the wine's acidity and enhanced its textural richness.
