Crafted solely from Castelão grapes, this single-variety clarete is a testament to meticulous winemaking. Harvested in late August based on weather and grape maturity, the fruit is hand-selected and sorted before spending four days in contact with the skins in a clay press. This brief contact preserves the wine's freshness and minerality. Following fermentation with indigenous yeasts, the wine ages for nine months in stainless steel vats. The resulting clarete boasts a light color and a captivating nose of red fruits accented by a hint of smoke or toast. On the palate, it delivers a refreshingly elegant style with very fine tannins.

Herdade do Cebolal

Nestled in the Alentejo Coast village of Vale das Éguas, Herdade do Cebolal is a family-run winery steeped in tradition. Since 1890, the estate has been passed down through generations, with Isabel and her son Luís currently at the helm (4th and 5th generation). Their philosophy centers on knowledge passed down through the years, respect for the land, and minimal intervention winemaking.

The winery encompasses 85 hectares, with 20 hectares dedicated to vineyards, and 65 hectares are forested areas. Recognizing the importance of environmental responsibility, they've embarked on a regeneration project, converting their first 7 hectares to Syntropic Agriculture, a method that mimics natural ecosystems.

Over the past few years, Herdade do Cebolal has embraced a sustainable approach, incorporating agroforestry, permaculture, and low-chemical intervention techniques. These practices not only protect the surrounding habitat and biodiversity but contribute to the overall health of their community.

Their vineyards boast a blend of native and international grape varieties, some reaching 80 years old. Aware of the challenges posed by global warming, they've reviewed their viticulture practices in recent years. A key strategy involves creating a symbiotic relationship between different crops, fostering a natural balance and minimizing the need for chemical intervention.

  • This commitment to sustainable viticulture aims to enrich the soil and manage water resources more effectively. Ultimately, by respecting the terroir, Herdade do Cebolal strives to produce wines that authentically express the character of their grape varieties.
