The winemaking process for Rosa Duck Pet Nat begins with grapes harvested at the end of August. These grapes undergo direct pressing, with a very short maceration of four hours to achieve their delicate color and flavor. Spontaneous fermentation, driven by natural yeasts, occurs in stainless steel tanks without temperature control. This primary fermentation is then completed in the bottle, creating its natural effervescence, a hallmark of the méthode ancestrale. The wine is aged on its lees without stirring for six months before disgorgement. The wine is unfined and unfiltered, preserving its authentic character and ensuring an unadulterated expression of its terroir.
