This unique blend is crafted from grapes sourced from over 30-year-old vines, with Baga grown on clay-limestone soils and Maria Gomes cultivated on sandy soils, reflecting the diverse terroir. The grapes are hand-harvested in early September. Maria Gomes undergoes a five-day period of skin contact before being blended with the Baga, which is vinified in a "blanc de noirs" style.
João Pato, operating under the Duckman label, is an artisanal project by Mariana Pato, daughter of Luís Pato. This project aims to challenge traditional notions of wine while remaining true to Bairrada's essence, emphasizing the true character of the region's indigenous varietals and its exceptional maritime influence. Their sustainable practices include minimizing the use of sulfur and avoiding animal products throughout the winemaking process, making the wine suitable for vegans. They exclusively use grapes from their own vineyards in Amoreira da Gândara (sandy soils) and Óis do Bairro (chalky-clay soils).
Spontaneous fermentation for the Kite Duck occurs over two weeks in stainless steel tanks, utilizing natural yeasts and ambient temperatures. Following fermentation, the wine ages six months in large 650-liter French oak barrels. The wine is bottled unfiltered, contributing to its authentic and natural character.
