The wine undergoes spontaneous fermentation at a temperature of between 22º and 25º for two weeks, allowing the flavors to develop naturally. The aging process, lasting 12 months, is a carefully orchestrated balance, with 40% of the wine maturing in used French barrels and 60% in stainless steel, contributing to its complexity and finesse.
