The viticulture employed is organic, with hand-harvesting and careful selection of grapes to ensure optimal ripeness and quality. The winemaking process prioritizes spontaneous fermentation with indigenous yeasts, and extended maceration on the skins to extract color, tannins, and flavor. Aging takes place in stainless steel tanks for approximately nine months sur lie, contributing to the wine's texture and complexity. Notably, the wine is bottled without filtration or stabilization, preserving its authentic character and potential for evolution.

The UNDO Tinto presents a vibrant ruby color reflecting its youthful energy. It offers a complex array of aromas on the nose, including ripe red and black fruits, such as cherry, plum, and blackberry, interwoven with notes of wild herbs, earthy undertones, and a subtle hint of spice. Grau Baumé works with a range of traditional Douro grape varieties, both red and white. Notable red varieties include Tinta Roriz, Touriga Franca, Touriga Nacional, and Tinta Cão. White varieties used in their production include Viosinho, Malvasia Fina, Gouveio, and Rabigato. Their production encompasses a variety of wine styles, with a particular emphasis on wines that express the unique characteristics of the Douro's diverse sub-regions. They are known for their Red Douro wines, which show off the power and elegance of the Douro's red varietals; their White Douro wines, which express the freshness and minerality of the white varietals; and their "UNDO" line of natural wines, showcasing a commitment to minimal intervention winemaking, including orange wines made with extended skin contact.
