Meticulously crafted, organic, and natural orange wine produced in an extremely limited run of only 400 bottles. The viticulture employed is decidedly hands-on, with grapes harvested manually and transported in small, 25kg boxes to preserve their integrity. The winemaking process reflects a commitment to minimal intervention. The grapes, a blend of Viosinho, Malvasia Fina, Gouveio, and Rabigato, are stomped whole without destemming, initiating a spontaneous fermentation with extended skin contact. Following a brief post-fermentation maceration, the wine is manually pressed. Aging occurs in stainless steel tanks for nine months sur lies, contributing to the wine's textural complexity. The wine is bottled without filtration or stabilization, preserving its inherent character.

The UNDO Curtimenta presents a striking goldish-orange hue, a testament to its skin-contact fermentation. On the nose, it displays a harmonious interplay of fresh and mineral aromas, a reflection of the terroir and minimal intervention. The palate reveals pronounced mineral flavors underpinned by a balanced acidity that lends vibrancy and structure. Tropical notes emerge, adding a layer of exotic complexity to the wine's profile. The finish is remarkably long, leaving a lasting impression of mineral elegance and tropical fruit. This is a very elegant and special orange wine, demonstrating the potential of these native Portuguese varieties when handled with such care.

Grau Baumé is committed to sustainable practices, notably through its dry-farming methods within its 13-hectare vineyard and hand harvesting practices. This dedication to sustainable viticulture reflects a deep respect for the environment and a desire to preserve the Douro's unique ecosystem. Its small production allows for a hands-on approach to every aspect of the winemaking process.
