Inspired by Georgian methods, Loureiro grapes are hand-harvested, partially de-stemmed, and foot-trodden before fermenting with natural yeasts in terracotta vessels. The wine spends a remarkable three months on its skins, extracting depth and complexity, before being pressed and aged for another four months without them. This innovative approach harnesses the delicate character of Loureiro, resulting in a truly unique expression.
