A sparkling wine from Lisbon is a 2022 vintage Espumante, showcasing a "pure Terroir with a twist of adventure" as an orange wine transformed by secondary fermentation. The wine is a blend of Moscatel de Setúbal and Arinto grape varieties. The Moscatel de Setúbal is sourced from the Lau vineyard in Palmela, while the Arinto comes from the Bonabal vineyard in Torres Vedras.

The winemaking process for Grape Tonic begins with an AMBAR base wine from 2022. This base wine then undergoes a second fermentation in the bottle using the Champenoise method, where sugar and yeast are added. The wine is aged on lees for 8 months before being disgorged in 2024. After disgorgement, the bottles are topped only with AMBAR reserve wines from vintages between 2019 and 2022. The wine is sealed with a standard metal cap (ANADIL) and does not use a traditional stopper.

The profile of Grape Tonic is described as fizzy and aromatic, an "explosion of joy." It is a "perfumed nectar" with bubbles, emphasizing drinkability as a dominant characteristic designed to be a crowdpleaser, "pure fun flirting with the human senses." The tasting notes reveal an aroma of peach and lychees mingled with bakery scents, and light orange blossom details combined with grapefruit. On the palate, fine bubbles contribute to a creamy peach pie sensation, concluding with a biscuity finish. The wine also exhibits some phenolic bitterness that masks any perceived acidity. A total of 3000 bottles of this wine were produced.

Founded in Lisbon, Portugal, in 2018, APRT3 Wines (first known as Vinhos Aparte) is the brainchild of three individuals with diverse backgrounds: Diogo, a sommelier; Guilherme, a farmer; and Luís, a nurse. Dissatisfied with the homogeneity of the commercial wine market, they envisioned creating unique, natural wines using a scientific approach.

Their journey began in a borrowed garage equipped with a single barrel and rudimentary steel tanks. Here, they produced their first 3,000 bottles, laying the groundwork for their innovative concept – "winemaking on wheels."

APRT3 embraced the lack of a permanent vineyard as an opportunity. They traveled throughout Portugal, sourcing high-quality grapes from distinct regions known for their classic varieties. In 2019, they rented a small winery in Torres Vedras, allowing them to expand production to 5,000 bottles.

Despite their initial success, the founders maintained their day jobs, ensuring the winery's sustainable growth. This dedication to responsible practices extended to their winemaking philosophy, emphasizing natural methods and minimal intervention.

2021 marked a turning point for APRT3. Recognizing the need for greater control over the winemaking process, they acquired an abandoned winery in Setúbal. This location offered several advantages: proximity to Lisbon, a historical connection to their first sourced grapes, and the potential for creating an open-space facility conducive to small-scale, diverse production.

The initial phase focused on renovations, carefully preserving artifacts of historical value. Crowdfunding initiatives provided crucial financial support, allowing them to prepare the cellar for the 2022 harvest and establish a stronger brand identity.
