A red and white wine blend from the "Terra Fria" region of Trás-os-Montes, despite the winery's base in Lisbon. It is crafted from a unique vineyard, approximately 120 years old, planted ungrafted on schist soils. This vineyard features a tight and variable vine spacing and is notably oriented to the north. This northern exposure, combined with partial shading from a pine forest at the beginning and end of the day, limits the vineyard's sunlight exposure and maintains lower temperatures. This specific microclimate is advantageous in Trás-os-Montes, which can be very hot during summer and naturally promotes grapes with higher acidity. The vineyard itself is a 50/50 blend of white and red grape varieties, specifically it utilizes Isabela, vidueño, and a mix of local old vine varietals.

The winemaking involves a co-harvest of red and white grapes during the second week of September. The grapes are then crushed and fermented in a "Lagar" (an open granite treading tank) for four to five days with foot treading. Fermentation finishes in barrels, where the wine then ages until bottling in February 2024. This traditional approach, combined with the white and red grapes blend, produces a distinctive palhete.

The wine is aromatically subtle due to the vineyard's limited sun exposure and cooler temperatures. This characteristic contributes to an elegant wine with a fresh and prolonged aftertaste, directly linked to the natural acidity promoted by the vineyard's specific conditions. The T-O-M Palheto has an alcohol content of 12.5%. It was produced in a limited quantity of 1500 one-liter bottles.

Founded in Lisbon, Portugal, in 2018, APRT3 Wines (first known as Vinhos Aparte) is the brainchild of three individuals with diverse backgrounds: Diogo, a sommelier; Guilherme, a farmer; and Luís, a nurse. Dissatisfied with the homogeneity of the commercial wine market, they envisioned creating unique, natural wines using a scientific approach.

Their journey began in a borrowed garage equipped with a single barrel and rudimentary steel tanks. Here, they produced their first 3,000 bottles, laying the groundwork for their innovative concept – "winemaking on wheels."

APRT3 embraced the lack of a permanent vineyard as an opportunity. They traveled throughout Portugal, sourcing high-quality grapes from distinct regions known for their classic varieties. In 2019, they rented a small winery in Torres Vedras, allowing them to expand production to 5,000 bottles.

Despite their initial success, the founders maintained their day jobs, ensuring the winery's sustainable growth. This dedication to responsible practices extended to their winemaking philosophy, emphasizing natural methods and minimal intervention.

2021 marked a turning point for APRT3. Recognizing the need for greater control over the winemaking process, they acquired an abandoned winery in Setúbal. This location offered several advantages: proximity to Lisbon, a historical connection to their first sourced grapes, and the potential for creating an open-space facility conducive to small-scale, diverse production.

The initial phase focused on renovations, carefully preserving artifacts of historical value. Crowdfunding initiatives provided crucial financial support, allowing them to prepare the cellar for the 2022 harvest and establish a stronger brand identity.
