A white field blend crafted from two centenary vineyards: Cabeças and Ribeiro de Seda (Jus). This unique wine showcases the vibrant character of indigenous Portuguese varieties, the exact composition may vary slightly from vintage to vintage.
Meticulous hand-harvesting occurred on August 11th and 13th, ensuring the grapes reached the winery at peak ripeness. A portion of the grapes was crushed by foot in two small 1000-liter vats, while the remaining 850 kilograms were destemmed in a hoist, resulting in non-sulfated musts. Fermentation proceeded naturally with indigenous yeasts, allowing the wine to express its true terroir.
Following fermentation, the wine underwent a unique aging process. A portion of the wine was aged eight months on the lees in barrels, while another portion was "carved" – a traditional method involving extended maceration – for an additional eight months. Malolactic fermentation occurred in both portions, adding complexity and softening the wine's acidity.
Respiro Lagar Branco unfolds on the palate with a captivating golden hue and an exotic and tantalizing aroma.
