This white field blend is crafted from two centennial vineyards, showcasing the unique character of the Alentejo terroir. The exact blend of varieties may vary slightly from vintage to vintage, reflecting the diversity of the vineyards. Meticulous hand-harvesting occurred in August, ensuring the grapes reached the winery at peak ripeness.

Following harvest, the grapes were gently pressed, and the must underwent a period of static decanting. A small amount of sulfur was added to the must. Fermentation proceeded naturally with indigenous yeasts within a cement vat, allowing the wine to express its true terroir.

The wine underwent a nine-month aging period on the fine lees within the cement vat. This extended period in the cement contributes to the wine's unique character, enhancing its minerality and textural complexity. Malolactic fermentation was not allowed, preserving the wine's vibrant acidity and fresh fruit character.

On the palate, Respiro Cimento Branco unfolds with a captivating golden hue and an exotic and tantalizing aroma.
