This white field blend is crafted from three centuries-old vineyards, with the primary vineyard at a remarkable altitude of 675 meters. This unique terroir, characterized by cooler temperatures and higher elevations, imparts a distinctive character to the grapes. The exact blend of varieties may vary slightly from vintage to vintage, reflecting the diversity of the vineyards.

Meticulous hand-harvesting occurred on August 20th, ensuring the grapes reached the winery at peak ripeness. Following harvest, the grapes were gently pressed, and the must underwent a period of static decanting. Fermentation proceeded naturally with indigenous yeasts, with two-thirds of the wine fermented at a controlled temperature of around 22°C in a cement tank. In contrast, the remainder fermented in barrels without temperature control. This dual approach allows for a nuanced expression of the grapes, capturing the vibrant fruit character and the subtle influence of temperature variations.

Following fermentation, the wine underwent a nine-month aging period on the fine lees in cement tanks and oak barrels. This extended aging period contributes to the wine's complexity and textural richness. Malolactic fermentation occurred during this period, softening the wine's acidity and enhancing its textural complexity.

On the palate, Respiro Altitude Branco unfolds with a captivating golden hue and a vibrant, fruity, and fresh character. Expect a delicate bouquet of citrus fruits, such as lemon and grapefruit, intertwined with subtle notes of white flowers, minerality, and a touch of spice.
