A wine from the Trás-os-Montes region, originating from old plots in the village of Travanca. The vines, aged over 70 years, are grown at 600 to 700 meters in granite and clay soils under a Mediterranean climate with Atlantic influence. This wine is a traditional field blend, a testament to the region's heritage, composed of 50% red and 50% white grapes. The vineyards are farmed with a focus on a transition to organic practices. The grapes for this wine were hand-picked during the last week of September and carried to the cellar in 20 kg cases.
A commitment to minimal intervention defines the winemaking process for Saroto Palhete. The grapes are whole-bunch foot-trodden in the cellar and macerated for three days. Following this, the grapes are pressed, and the juice is racked to used Austrian oak barrels where wild fermentation occurs naturally and without temperature control. Both the alcoholic and malolactic fermentations are completed in these barrels. After aging for eight months in the barrel, the wine is racked to a stainless steel tank to decant naturally before bottling. The wine is unfined and unfiltered as a natural product, and may present sedimentation over time.
